Clean the artichokes to extract the tender hearts, then soak them briefly in cold water with a squeeze of lemon juice. 
- 
Pat them dry with kitchen paper. 
- 
Place the burrata at the centre of the plate and arrange the artichoke hearts around it, opening them like petals. 
-
